Stock Patterns Explained

When looking at stock charts what you see may not mean much to you. On these charts there are patterns. These patterns mean a lot to the investors that analyze such data to make their trades. There are many different indicators and no one indicator out weighs the other. However when taken into consideration relative to one another it begins to make sense. Recognizing these patters helps investors make successful predictions on future investments.

Pot Stock

These patterns have names which helps identify their movement. There is a pattern called cup and handle. This particular pattern identifies a stock that starts high and then dips and comes back up again.

Another pattern is called head and shoulders. This identifies a stock that peaks then dips then peaks again higher than the previous peek. Then drops and finally peaks again. This is a pattern liked by bears.

One of the most popular patters is called the moving average. The moving average is a very strong indicator. Basically what it does is identify a stocks movement over a given period of time.

Another pattern is called the Relative Strength Index. This identifies a stock as follows. It compares the number of days a stock finishes up compared how many times it finishes down.

Another pattern is called the Money Flow Index. The money flow index goes beyond the relative strength index in that it takes into account the number of shares traded as well as the price.

Then there is the Bollinger Bands. This is a chart with a grouping of three lines. The middle line is the moving average. The other two lines which are the upper and lower lines are indicating market volatility. The more volatile the market the further apart these lines go. When there is little volatility they come close together.

Chicken Rice Croquettes

Pot Stock

Equipment: shallow pans, 3-gallon stock pot, 18" x 26" sheet pans
Serving Size: 2 croquettes
Yield: 50 servings
Oven Temperature: 375°F.

Pot Stock

Ingredients:
Quantities:

- Chicken-flavored soup base 1/2 cup
- Hot water 1 1/2 gallons
- Regular long grain rice 3 pounds (6 3/4 cups)
- Finely chopped onion 1/2 cup
- Salt 2 tablespoons
- Chicken fat, butter, or margarine 3 cups
- All-purpose flour 3 cups
- Ground cooked chicken 9 pounds
- Eggs, slightly beaten 6
- Milk 1 quart
- Dried bread crumbs 2 quarts
- Melted fat or vegetable oil as needed

Procedure:

1. Blend chicken soup base with water. Measure 1 gallon into stock pot and bring to a boil. Stir in rice; cover and cook until rice is tender. Drain if necessary.

2. Combine rice, onions, and salt.

3. Melt fat in stock pot, blend in flour until smooth and add 2 quarts reserved chicken stock. Cook over low heat, stirring constantly, until thickened.

4. Stir rice and ground chicken into thickened sauce. Chill thoroughly.

5. Using No. 12 scoop, form chilled mixture into 100 croquettes. (Make round, cylindrical, or triangular).

6. Blend eggs and milk in shallow pan. Place bread crumbs in another shallow pan. Dip croquettes first in egg and milk mixture, then roll in crumbs, coating well.

7. Arrange croquettes on well-greased sheet pans and brush lightly with melted fat. Bake in 375° oven for 30 minutes or until nicely browned. Turn once for even browning.

8. Serve with chicken gravy or mushroom sauce.

Recipe #1 - AMISH CHICKEN NOODLE SOUP

3 lb. chicken

2 qts. water

2 tsp. salt

1 1/2 c. chicken stock

2 c. celery, chopped

2 c. carrots, chopped

1 tart apple, chopped

1 c. onions, chopped

Dash pepper

4 c. egg noodles

Place chicken in kettle with 2 quarts water. Cover until tender (about 2 1/2 hours). Remove chicken from kettle and strain broth. Debone chicken and return to kettle with strained broth. Add chicken stock, celery, carrots, apple, onions, and pepper and cook until vegetables are tender. Add noodles and cook 8-10 minutes.

Recipe #2 - AMISH CHICKEN - CORN SOUP

2 lbs. cut up chicken

5 c. water

1 med. onion, chopped

2 tbsp. chopped parsley

1/2 c. chopped celery

2 c. corn

Salt and pepper

1 c. flour

1 egg, beaten

1/4 c. milk

Simmer chicken in boiling water, remove bones and skin. Strain the stock. Return to pot, add onions, celery and corn. Simmer till vegetables are tender. Mix flour with egg and milk. Rub mixture with fork till it crumbles. Drop crumbs in soup. Cook 10 more minutes covered. Serves 3 to 4.

20 Quart Stock Pot - Do You Know What Size Stock Pot You Need?

A good stock pot is essential for anyone who cooks. You don't need to be a professional chef to need to have a good stockpot. Most people who are looking to buy a quart stock pot really have no idea what size to buy.

A 20 quart stock pot will handle any need you may have for cooking now and in the future. And, since a good pot will last for many years it is important to plan ahead for your cooking needs down the road.

Stock pots range in size from 6 quarts to over 100 quarts. The 100 quart sizes are mostly used for commercial cooking. The size is important because you want something big enough to make everything from soups, stocks large pasta dishes, lobster, corn on the cob for your family or even enough for a large gathering you may have.

When considering all the uses the pot would have, the 20 quart stock pot is the size I chose for my kitchen. It will make 6 cups of stock. My family likes crab, and the 20 quart size is enough to make about 5 servings of crab boil.

A 12 quart stock pot will handle sauces, soup, chili, and most everyday items you will be making, but I chose the bigger size to ensure a pot that would accommodate anything I would need it for.

A pot with a lid that fits tight is also essential. This ensures the heat stays in the pot and will decrease the cooking time and keep the moisture and flavor in the pot.

Heat resistant handles are another new feature that I find important. Some can even withstand oven temperatures. The heat resistant handles made of silicone are just made to be used on the stove, so be sure you know which your stockpot is made to handle.

Whether you choose a 12 quart stock pot or a 20 quart stock pot, or even something in between, just take the time to do your research and choose the size that is best for your cooking needs. This is a purchase that will last for many years, so plan ahead and choose a pot that will be durable and usable and last you numerous years.

BBQ Pot Roast

Here is a great twist on a winter classic. The other day I was craving a moist, succulent and hearty beef pot roast, but I knew I wanted to get creative. Pot Roast has been around seemly for ages and it never gets old. The key to a good pot roast is time and temperature. This recipe originated out of poverty. Many families could not afford the more lean expensive cuts of beef, so they had to settle for the more fatty and rugged cuts like the chuck and the blade roast. Making a tough cut of beef into a melt in your mouth delicacy is very simple and inexpensive. Its a wonder we only turn to this dish in the winter months.

After getting home from the store and beginning to prep my veggies and potatoes, I decided to make some slight changes to the cooking method. First, I turned the grill on high heat and let it get as hot as possible. I seasoned my meat with salt, pepper, garlic and fresh thyme. Once seasoned, I rubbed the meat with olive oil. I then placed my roast on the grill and seared the entire roast by browning the meat on all sides. I then removed the roast to a platter and set aside.

From there, I took my carrots, red onion, celery and potatoes and seasoned them with salt, pepper and garlic powder. I then tossed all of the veggies and potatoes with olive oil and placed them on the grill. I browned the veggies and the potatoes for about five minutes. Once nice and brown I removed them from the grill and placed them directly on the bottom of my roasting pan to form a nest. I then placed my seared beef on top of my vegetables and poured 2 cups of chicken stock mixed with 1 cup of BBQ Sauce into the pan. I placed the pan into the oven at 325 degrees for 2 hours.

After cooking for about two hours, I removed the pan from the oven and set the beef and vegetables on a platter. I then poured all of my pan juices and stock into a sauce pan and reduced to make my gravy. I simply sliced the roast and served it with all of the veggies and potatoes, it was amazing. The roast was melt in your mouth good. The BBQ flavor from the grill was outstanding. This is a must try. Keep in mind that you may need to add some more stock while your roast is baking.
