Green algae is a common swimming pool problem, which may appear as a greenish growth on the floor and walls of a swimming pool, a green tint to the pool water, or greenish material suspended in the pool water. The only swimming pool chemical that will kill an algae growth is chlorine based swimming pool "shock". Shock is a granular form of highly concentrated chlorine, which quickly raises the chlorine level of the swimming pool water. The elevated chlorine level makes the pool water conditions unlivable for anything organic, and algae quickly dies.

Before adding a dose of chlorine pool shock, the pool walls and floor should be brushed to remove as much of the algae as possible. This will greatly reduce the amount of time it takes to kill and clear the algae bloom. The normal "maintenance" dosage of most swimming pool shock is 1 lb. per 10,000 gallons. This dosage should be increased to 1 lb. per 7,500 gallons, or you should follow the manufacturer's dosage suggestion for killing algae. Chlorine pool shock needs to be dissolved in a large bucket of water before it is added to the swimming pool. Always add chemicals to water when dissolving. NEVER add water to chemicals. The swimming pool cannot be used until the algae is dead, and the chlorine level of the pool water has returned to the safe range of 1-3 ppm.

The pool filter system should be running when the chlorine pool shock is added, and the filter system should continue to run 24 hours a day until all signs of algae have completely left the pool. Monitor your pool filter system closely and thoroughly backwash or clean the filter each time the pressure rises 10 psi. above the normal operating pressure. The dead algae that your pool filter collects may quickly dirty the filter, and need to be cleaned out frequently. If the conditions of the swimming pool does not significantly improve after 12-24 hours of filtering, add a second dose of chlorine pool shock at the increased rate. Once the algae is dead it will turn a white or grayish color, and it will be suspended in the pool water or settle to the floor. When there is no longer any sign of the color green in your pool, thoroughly vacuum the swimming pool. The pool filter should be backwashed or cleaned to be sure that dead algae is not trapped inside the filter. If the filter is not thoroughly cleaned the algae may quickly return.

Test and balance all of the pool chemical levels using the guidelines below, and pay particular attention to the chlorine level of your swimming pool water in the future. Algae and harmful bacteria are almost immediately destroyed by a chlorine level of 1 ppm or higher. You have experienced an algae problem because you have not properly maintained the chlorine level of your swimming pool, and it was allowed to drop below 1 ppm. Test pool water frequently and make any necessary adjustments for a clean, safe and easy to maintain swimming pool.

How to make it:

Bring the water to a boil in a pot, then add the celery, carrots, and onion and simmer for 10 minutes. Add the dill, parsley, and pepper, and then let the soup boil until the carrots are soft. Add the tilapia fillets and let the soup simmer gently.

Cut the bread into cubes and fry them in the oil to make croutons. Add the lemon juice to the soup when the tilapia is opaque and white and break up the fish fillets using a spoon.

Blend the soup a little bit with a hand mixer but leave it chunky. Add some salt to taste and serve it hot, topped with the croutons.

Fence Your Yard Without Spending A Bundle

Many people are fairly shocked to realize how expensive it can be to fence their yard. If money is tight, you can use the following approaches to limit the damage to your bank account.

There are materials and methods that can save quite a bit of money, of course, but still installation is a major expense and a DIY approach can save regardless of the choice of fence. A fence that is actually on adjacent property will not tend to make "good neighbors."

If you install your own fence or not, there are materials and types of fences that represent a considerable savings in cost. Chain link fences do not offer the appeal of wooden panel fences, perhaps, but they cost much less. Of course, rail and post fences are even less expensive. Painting them will take hide the pallet look and make an acceptable and cheap fence. There is no reason that a fence has to involve a major strain to your budget.

Cat Repellent or How to Keep Cats Out of Your Garden

Do cat repellents work? How to stop a cat from using garden as litterbox? Tell me how to keep cats out of my garden. These are common questions of concern to all gardeners but is there a real answer?

The first line of defence is to ensure that your yard boundaries are secure. Any gaps in your fence should be blocked to deny low level access. But cats can jump so fix a taut wire or string some six inches above the top of your fence to deter this approach.

Once inside your garden many people say that the best cat repellent is a dog who will soon see off any feline invader. If you are not a dog lover then you will have to resort to more passive methods. Since cats like to lie on freshly dug soil you should lay mulch on your borders so that no bare soil is left exposed. Seed beds should be covered with wire netting or twigs arranged as a barrier.

Young trees should have plastic guards fitted around their trunks to protect them against use as a scratching pole.
Your garden pond should be covered with netting to keep your fish safe.

Cats are generally known to dislike water so a well aimed bucketful or a squirt with the hose will certainly make an intruder run. After one or two dousings it may learn the lesson and stay away.

To protect plants and borders both mothballs and citrus are said to be effective deterrents. Place the mothballs, orange peel or lemon rind in the borders. Alternatively spray cloths with orange scented air freshener and place the cloths around the plants you wish to protect. Other known cat repellents are cayenne pepper, coffee grounds, pipe tobacco, lavender oil, lemon grass oil, citronella oil, eucalyptus oil and mustard oil.

Certain herbs are said to deter cats. In particular rue but not catmint which has the opposite effect. Coleus canina is another plant which is marketed by one merchant as a cat repellent.

The broadcaster Jerry Baker has suggested treating your yard with a tonic made from chewing tobacco, urine, birth control pills, mouthwash, molasses, detergent and beer. A smallholder has reported success using dried rabbit blood but you may feel that the ingredients listed in the previous paragraph should be tried first.

If you visit your local garden center or hardware store you will find several cat repellent products on sale. These range from electric water sprinklers and ultrasonic devices to sprays and granules.

Motion activated sprinklers act in the same way as a burglar alarm using an infra red detector. When the cat enters the area covered by the detector the sprinkler shoots out a jet of water to scare the animal away. It is claimed that, after one or two encounters with the jet, the cat will learn to avoid the area.

Ultrasonic devices emit a high frequency sound which is annoying to cats (and dogs) but is not audible to humans. There are various different models some of which operate continuously and others which have an infra red detector and only emit a pulse of sound when the cat triggers the device. To be successful you need to ensure that the model is powerful enough to cover the area you wish to protect. In addition make sure that the sound frequency is designed for larger animals since some models are intended to deter insects and so would be no use for cats.

There are also commercial scent cat repellents. Those that use chemicals should be kept away from any food crops but the essential oil based granule varieties act in the same way as orange and lemon peel mentioned above. Another way to keep a cat out if the garden is a repellent evaporator which consists of a container holding puffed rice which has been impregnated with essential oils. These are effective for three to four weeks and can then be refilled for a further period. Another natural product which many people claim really keeps a cat out of the garden is lion's dung. You may need to visit your local zoo to obtain this although some stores do stock zoo poo.

In Ontario, Canada the local township provides a cat trap service. Once the animal enters the cage it cannot escape but is completely unharmed. The owner has to pay to recover his pet and so should be encouraged not to let the cat stray in future. Apparently few owners bother to reclaim their cats but just obtain another kitten. However this sounds like a good way of dealing with a cat that cannot be deterred by any other method. If there is no such scheme in your area, just buy your own trap.

So, to recap, the first priority is to secure your boundary fences. Then you have the whole selection of suggested cat repellents ranging from homemade recipes to expensive commercial gadgets. I would suggest that you try the orange peel and prickly twigs for a start. If you are around when the intruder appears, try the bucket of water or hose. Even if you miss, the shock may be a sufficient deterrent. If these do not do the trick, then you may have to consider the commercial alternatives.

Split Personality - A Myth Or a Reality?

In this world of todays', there are a lot of implausible diseases; one of them is the disease of human's mind, which is called as split-personality disorder. Not many people around the world believe if this disease really exists or not, or they rather think that the person is acting.

I was on my way from Bangalore, India to Mumbai, India and during the journey I was just chatting with the person sitting next to me and during the process of our conversation we begin to discuss on "Split Personalities".

I distinctly remember that when I was in college, I had one very good friend of mine and his name was Mr. T. Kiran Kumar. The uniqueness of our relation was our compatibility and depth of understanding. Whether we were with kids, or classmates or elderly people or uneducated people or females or highly intellectuals, hardly mattered; how we might behave, was entirely based on the type of group that we were part of. Believe me or not but our attitude, approach, behavior, and our way to react to a given situation was based on the type of group we were into. Does that imply that we were having split personalities? If that is the case then every one of us are having split personalities. We behave differently with our family members, with our friends, our spouse, and unknown people, right?

Let's see.

Let us understand the term "Split Personality".

Definition of Split Personality: "A relatively rare dissociative disorder in which the usual integrity of the personality breaks down and two or more independent personalities emerge".

Explanation: There is no category or phenomenon in psychiatry called split personality. The term is commonly used in popular language to indicate an ambiguous or radically and spectacularly alternating type of behavior of the "Jekyll and Hyde" type. It is often bewildered with the medical illness of schizophrenia because the etymology of the latter (from the Greek schizein, to split + phren, mind) suggests, misleadingly, that schizophrenia is a type of split personality. In schizophrenia, however, the splitting is within one single personality as the individual's thoughts, feelings and emotions are seriously and confusingly disconnected from each other in a chaotic and random fashion. Schizophrenic individuals, far from having split or multiple personalities, actually have a great struggle maintaining the coherence and integrity of even a single self.

Before proceeding further let's try and understand as what we mean by term "Personality".

HUMAN PERSONALITY

There are three distinct meanings for the term "personality," two of them general and popular and the third technical and philosophical. The first and most general meaning is that personality is the sum of the characteristics, which make up physical and mental being. These include appearance, manners, habits, tastes and moral character. The second meaning emphasizes the characteristics that distinguish one person from another. The two meanings overlap or merge into each other, as the first considers all characteristics pertaining to the individual, without comparing him with others, while the second sees the same facts in relation to the outside world and fixes attention mainly upon the features that distinguish the subject from his fellows. This second meaning is equivalent to individuality. It represents a widely prevalent conception of the term.

But the third meaning is the most important, and is the only conception of any value to the psychic researcher and the philosopher or psychologist. This conception of personality is concerned only with mental characteristics; it makes no distinction between common and specific marks. In fact it connotes mental processes rather than fixed qualities. The capacity for having mental states, or the fact of having them, constitutes personality for the psychologist and the philosopher. Personality is thus the stream of consciousness, regardless of the question whether any special state is constant or casual, essential or unessential. Physical marks will have no place in this conception, unless they may serve as symbols of mental states. It abstracts from them and denotes only the stream of mental phenomena.

This third meaning is so radically different from the other two that it gives rise to perpetual misunderstandings between the philosopher and the public. These misunderstandings arise particularly in the discussion of survival after death. The layman with his conception of personality looks for physical phenomena of some kind to illustrate or prove it. Consequently, if interested in psychic phenomena at all, he prefers materialization, which best satisfies his conception of personality. He cannot take the point of view of the psychologist or the philosopher, who neglects these purely sensory characteristics, and fixes his attention on mental states as the proper conception of the personality, which may survive. Materialization would supply the very characteristics, which the layman fixes upon to represent personality. But precisely the fact that mental states are not presented to sense, leads the philosopher to conceive of immortality as possible.

If the layman's conception were correct the philosopher and psychologist would deny the possibility of survival with entire confidence, as a necessary implication of bodily dissolution. The day could be saved only by the doctrine of a "spiritual body," an It astral body," or an "ethereal organism," supposedly a replica of the physical organism in its spatial and other characteristics. These represent personality after the manner or analogy of the physical body. The real spirit may indeed have a transcendental bodily form; but the stream of consciousness remains the same whether there is any "spiritual body" or "ethereal organism" or not. This is the fundamental element in all conceptions of spiritual reality. It is not necessary to decide the question of a "spiritual body" or "ethereal organism" as the condition of believing in the existence of spirits. That is another and perhaps a secondary problem. What we need to know is, whether the stream of consciousness survives, whether the personal memory continues, not how it continues. The fact of survival is to be considered first and the condition of it afterwards.

Historical Review of "Split Personality"

Possible cases of split personality have been reported in the medical literature since the early 19th century, and the condition was formally defined in the first years of the 20th. But until recently it was considered extremely rare--fewer than 200 cases were described before 1980. The diagnosis became much more common in the 80s for several reasons. One was the phenomenal popularity of Flora Schreiber's 1973 book Sybil, which told of a woman with 16 personalities. Stories of "multiples," fictionalized or otherwise, were nothing new--The Three Faces of Eve dates from 1954, "The Strange Case of Dr. Jekyll and Mr. Hyde" from way back in 1886--but Sybil made a crucial innovation, introducing the idea that multiple personalities stemmed from trauma during early childhood. Around the same time, child protection advocates and feminists began arguing that child abuse, especially sexual abuse, occurred far more often than previously supposed. And in the late 70s, in a phenomenon thought to be linked to the resurgence of Christian fundamentalism, reports of so-called satanic ritual abuse first captured the public's imagination.

Presented with, on one hand, allegations of an unrecognized epidemic of crimes against innocents and, on the other, a simple mechanism to explain why their troubled patients couldn't remember any abuse (i.e., the personality divides in order to shield itself from horrific memories), a small but devoted group of therapists began diagnosing multiple personality disorder with alarming frequency--more than 20,000 cases had been reported by 1990. Under the influence of hypnosis and other techniques, subjects reported dozens, hundreds, or even thousands of "alters" whose behavior, age, sex, language, and occasionally species differed from that of their everyday personas. Alters were coaxed into revealing bloodcurdling stories of abuse by family members, or of sacrificing their own babies to shadowy cults. One prominent multiple personality specialists claimed that the satanic network programmed alters into its victims, which it could then trigger to act in certain ways by sending them color-coded flowers.

By the early 1990s it began to dawn on rational folk just how preposterous the whole business was. Having investigated more than 12,000 accusations over four years, researchers at the University of California, Davis, and the University of Illinois at Chicago determined that not a single case of satanic ritual abuse had been substantiated. A 1992 FBI study arrived at the same conclusion: overeager therapists had planted horror stories in the minds of their patients. In 1998 psychologist Robert Rieber made a convincing case, based on an analysis of audiotapes, that even the famous Sybil had confabulated her multiple personalities at the insistence of her therapist. The bubble burst, and diagnoses of multiple personalities subsided.

Some real Life Examples of Split Personalities

Case-1

The first patient is a man named William S. Milligan, he was caught by the charge of rape in Ohio at 1977. As police and the psychologists examined him, they found the unbelievable fact that he had several personalities. Here are the first ten personalities they found. In The Minds of Billy Milligan;

1. The first personality is the main personality, Billy, twenty-seven years old, blue eyes, brown hair.

2. The second personality is Arthur, twenty-two years old, British. This personality and the next one are the keeper of the "Spot", where they can have the control of the body, or become themselves open to the outer world through the body of Billy.

3. The third personality is Leigen, twenty-three years old, Yugoslav, who knows how to fight and can use gun and other dangerous stuff, controls the hate.

4. Fourth personality is Allen, eighteen years old, talkative, only one who smoke and right handed.

5. Fifth personality is Tommy, sixteen years old, knows how to unlock chains or handcuffs, and the specialist of the electricity.

6. Sixth personality is Danny, fourteen years old, always scared to something especially man, blond hair, blue eyes.

7. Seventh personality is David, eight years old, controls pain, red-brown hair blue eyes.

8. Eighth personality is Christine, three years old, cannot talk, blond hair, female.

9. Ninth personality is Christopher, thirteen years old, brother of Christine.

10. For the last tenth personality, Adarana, nineteen years old, quiet, lesbian, female.

Those were the main ten personalities of the William S. Milligan. As if you wonder how they know their outlooks, William Milligan, Billy has a hobby of painting, or some of the personalities do. Therefore, they draw each other on the painting and that is how they get to know their outlooks.

Case-2

The woman's name is Claudia Ellen Yascow. She was arrested by the charge of killing four people, which they found later that she was not the suspect. However, it was not unnecessary for the police to think that she was the suspect, because she had information of the scene that cannot be known unless the person has been there. Even though the information was confusing and messy because of her mental disease, police believed her and thought that she was the suspect, for she knew even where the pot and other little detail was at when the crime occurred. She was caught once but let go after few month with the check of psychologist that she has a incubation type of split minds, and the lie detector found her answer to the question that she was not at the scene when the crime happened showed what she said is true, "No, I did not."

Her trouble is brought up mainly because of her mental disease, incubation type of split mind. Claudia is different, as she can always be herself even she is in a great pressure, but she will be losing a collect criterion to judge what kind of situation she is in. For example, when she was caught in jail, she truly thought that she was in a middle of movie taking and she was playing her rolls of main heroine. "Suddenly she put the smile on her face and said 'I never thought that I could have a great chance like this,' She leaned her head on the wall.'I've always thought of having a chance to do a big act like a big actress. I do have some experience of acting in few films as a supporting player, but if I play this murderess act, maybe I can be very famous.' Dye stared at her and asked, 'You think we are making a film right now?' She slapped his hand softly, smiling, 'Oh Dye, you have seen all those cameras at the corridor and those of TV's. I hope I can have a deal with a lot of money coming in, you know it is kind of hard to act.'

As you can see above, by the shock she got from been captured by police, her mind had made an escape way from pain by believing that all the stuff going is an act and not a real deal. This is very close to what Billy has done to himself; only the difference is that fortunately, Claudia was not getting shocked when she was before teenager, but after she became an adult. I think that this is the reason why she was quite right in condition even though she had some mental problems since she was fourteen and had been looked after by a psychologist. Her case is still, with a great trouble, that in such a hard circumstance like in the police office, she would be nervous and will not be able to say what she really wants to.

As she says in Unveiling Claudia, "If I am lying to you right now, that is anything but my will. She is telling the truth here that her mind is trying to protect herself by not telling the truth about the matter, and she cannot help it. It is rather an act of her instinct, to let the shock coming above her because of telling and remembering the truth softer in order to not breakdown for it.

This has been appearing in the way of making the book. As she was making the confession about the murder, she always kept telling a one big story with half lie and half-truth. As you will find later that the truth was such a hard one that it was too much for her to remember it and telling it to the person who you met one or two years ago. This can be seen in Unveiling Claudia, " 'Claudia, I don't know what I should believe in you.' She put her hand on my shoulder and looked into my eye. 'I'm sorry Dan. I do trust you more than before. But not enough.'" This conversation was held more than two years past after they have met, and as you can see that she is very careful about telling the truth and that is why she kept telling lie, or something that she believed it was a truth and unfortunately it was not. Although she is always careful about telling the truth, she is always an easy person to make believe. If someone tells her that she has a superstitious power, she believes it and so on. This has prevented her from stopping the murder, because she had known that the real suspects of the case had planned to proceed the crime week before the murder. However, she was busy and also her weak mind was scared with the pressure what if she tell it to the victim and the what if the suspects would know about it and come after her? In the way of her mind escaping from the reality, she started to believe that it was an oracle, and she could not stop the crime. This story was one of the reason she was arrested once by the story told by her friend that she knew that the crime is going the happen a week before, and the truth was different.

The shocking truth was told on the end, and it was shocking enough for her mind to look for some escape way. On the night when crime has occurred, she was forced to go to the place with a gay, right after the murder had happened. The man was gay but he had a gun in his hand and she could not refuse to go there with him. Their car came in front of the house just in time when two suspects where killing the victim, and after they had gone away, they went to the house's garage where there was a one dead body of a man and one body of woman laying on the floor. Claudia was forced to put her hand into the dead woman's genitals and find a bag of drugs. Now, this is a real hard and sick experience for the twenty-six years old woman, or any other person in the world. She was shocked and her mind could not stand it and she has lost her memories in order to prevent the breakdown.

After few days she found herself knowing about that crime but could not find out why she knows so much about it. She shared that story with police and they misjudged her as a criminal and put her in jail.

"My father is a metal health counselor here in the US. He has seen only 2 multiple personality disorders in his 20+ years of private practice. In both cases patients were former participants in covens. One was a willing participant and the other was supposedly the unwilling offspring of a "breeder" program.

Neither my father nor I are generally prone to believe such things for the very reasons that you put forth in your article but never-the-less both patients exhibited classic multiple personality disorder symptomology. In the case of the unwilling participant he came to the conclusion that the majority of the damage to her psyche had been done by a previous therapist, when he met with the therapist and watched him work with her he was then certain that this was the case... Perhaps this fits with your theory of therapists putting ideas into people's heads.

Unfortunately, this leaves a difficult problem to solve... Whether or not the problem is caused by a therapist or by some other external force, what is to be done with these people? Regardless of *how* they got that way they still deserve to be whole persons who will probably require further therapy... The *cause* of multiple personality disorder is not so important to determine for these patients as healing is.

The process used by my father in his therapy sessions is called re-integration where the personalities are not taught how to *co-exist* but rather how to re-integrate with the main persona or the core identified "true self" as discovered in therapy. This re-integration can be very simple or complicated depending on the strength of a particular personality.

For instance, if a person has one major alternate and several minor ones the minor ones would be integrated first before the major etc. The difficulty arises because for each personality present there is a tremendous loss of individuality for each one and in each case this loss of an individual "persona" is often felt as a grief or loss of a friend for the true self. As each personality is re-integrated the true self becomes more in tune with its own emotions and feels this grief more keenly. For this reason it is important to take things slowly and to address only personalities that emerge rather than force anything.

In many cases a person's sense of self may be so buried under all of these layers of 'others' that finding the true self may be the most difficult part of the therapeutic process. Often this self is so weak and lacking in will that it presents as a smaller, other personality. It takes caring, sensitivity and insight to help these people since this true self is often a very young child.

It might sound strange and eerie and it is... The problem with your argument of is it all in their head is that of course it is... Does that make it any less real for the people who suffer from it? It is very similar to people who experience vivid hallucinations, are those things real? No. Do they cause them grief and pain? Yes".

Savory Turkey Broth

This delicious, savory broth is perfect for soups and gravies. This recipe yields a lot of broth. To make even more, simply add a second package of turkey legs and double the vegetables. Remember to freeze a portion of it in air-tight freezer bags. It holds for months -- we made ours on Thanksgiving and then made a soup in February.

1 package of turkey legs (6-8)

3 large carrots, chopped

1 leek, chopped

1 large onion, cut in half

2 stalks celery, chopped

6 sprigs fresh thyme

3 sprgs fresh rosemary

10 whole peppercorns (black, or throw in some pink if you're adventurous)

1 head of garlic, crushed

3 Tbs extra virgin olive oil

Heat your oven to 400 degrees F and roast turkey legs in a pan until golden brown, about thirty minutes. In a large stovetop soup pot, heat olive oil and add all your vegetables -- chopped celery, carrots, leek, and onion. Then add thyme and rosemary sprigs and finally all your crushed garlic and peppercorns. Let simmer until vegetables begin to turn translucent and the garlic boils down.

Now add the turkey legs. Pour in any juices from the pan. Let everything simmer for about 2 minutes, stirring so the turkey legs absorb the flavors.

Fill the pot with water to about three inches below the rim. Stir and bring pot to a boil. Once boiling, reduce to a simmer and let sit for about two and a half hours. You'll want to occassionally skim foam and grease off the top.

Strain out all solids.

There you go. A delicious broth for soups, stews, and gravies.

And it will hold for quite a while.

You can make the same broth with chicken legs, wings, and bones.

EGUSI SOUP IN OLIVE OIL

INGREDIENTS

Meat - according to your budget or if you prefer Chicken or Turkey
1 cup of shelled Egusi seeds
1 medium sized dry fish.
1 medium sized smoked fish (catfish or any suitable variety)
1 medium sized stockfish
1 large onion
6 Red Peppers (chili) - blended.
3 Large red pepper - blended
1 cup of Crayfish - blended
2 soup spoonful of Goya brand olive oil.
2 Maggi
Salt
1 bunch of Ugu
Bitterleaf (washed and bitterness completely squeezed out).

PREPARATION

All kitchen disinfection, cleansing and preparation of ingredients before cooking is duly observed. Roast Egusi seeds on a tray in an oven for about 20 mins (this helps to reduce the oily effect) and allow to cool and blend with the Rhodo, tatashe and a little bit of onion.

Heat the olive oil in a clean pot and add a cube of magi and a pinch of salt, stir to mix up and add the blended pepper mixture. Fry for a while and set aside.

In another clean pot put the washed meat, stock fish, magi and salt and a little bit of the onion, boil until meat is a little tender.

Heat up the fried pepper again, add Egusi and continue frying for about 3 mins to mix and blend.

Add the cleaned smoked fish and crayfish and cook for about 3 mins, then add the meat stock and stir thoroughly to blend (some people would remove the meat from the meat stock and add it to the soup when it is almost ready but I prefer to cook everything together so I cook only for a few mins or when a little tender and use the meat and stock during the rest of my preparation together). Add the washed bitterleaf and cook for a few mins.

Add the shredded ugu leaves and simmer for about 1 min and remove from heat. Can be served with low calorie tuber dish like amala and pounded yam.

Nigerian tuber food dishes are made by boiling the tuber food variety - Yam, Cassava, Cocoyam, Plantain or rice in water for a specific period of time and then pounding in a wooden mortar and pounded with a wooden pestle. Let me show you how to make this tuber dishes of ours that stand out everywhere. It can be eaten with a variety of soups and stews.

Now let's make our tuber dish to go with the soup, I will prepare each listed above because they are easy and fast to prepare.

EBA (GARRI)

INGREDIENTS

Water
Cassava flour (sold as garri in the market)

PREPARATION

Depending on how many people you are making the dish for, pour a measure of water that should be enough for the number of people ( you have to be sure or if not when making the Eba don't use up all the water if you feel its too much) into a kettle and heat up to boiling point.

Take a large bowl or container that can take the quantity of Eba you are making and pour in the measured water into the bowl.

Sprinkle the cassava flour gently into the bowl until the mixture before you is thick, take a spatula or a large wooden spoon (if you don't have a spatula) and turn the mixture until well blended and fluffy, (you would have to turn it a number of times to get the right consistency) and "Voila" the dish is ready to go with the Egusi soup.

FUFU (AKPU - IGBO)

INGREDIENTS

Water
Cassava mixture (sold in the market as akpu) normally white and wet
Mortar
Pestle

PREPARATION 1

Fill a sauce pan with water midway and heat to boiling point

Pour the cassava mixture into the mortar and mix with water until a smooth paste is formed; break up into miniature ball using the hands to form the balls.

Drop each ball gently into the boiling water and cook for 5 mins.

Remove each ball gently from the pot into the mortar and pound using the pestle until a thick paste forms, mold into balls again and bring the pot to boil again.

Drop each ball gently into the boiling water and cook for 5 mins.

Remove from the pot and set pot aside, pound again until you get a thick paste that looks well cooked and it's ready for eating.

PREPARATION 2

Fill a sauce pan with water and add the cassava mixture into it until you get a smooth paste, make sure that you are not using a lot of water instead start with a little at a time till you get the smooth paste.

Heat the mixture over medium heat and continue stirring periodically as the mixture thickens.

It would take a while about 25 - 30 mins for the mixture to become thoroughly cooked and throughout this period, you have to keep stirring or the mixture forms thick curds that are unpleasant and makes the final food unpalatable. You may have to bring down the pot at this stage and hold it firmly between the soles of your feet for a firm grip and stir vigorously or you may solicit the help of another to hold the pot while you stir.

The mixture will become very thick and hard as you continue stirring keep on stirring until a thick lump of consistent and thick mass is before you, then its ready.

You can find the already prepared ones in the market available for instant eating but personally, if I don't know the seller and can't vouch for the overall hygiene in the course of the preparation then I don't buy. This is because most of those being sold in the market have an unpleasant smell and taste and you might be repelled but if you can manage it then its ok but then some of the are also very good and clean and moreover, it saves you a lot of time.

POUNDED YAM

INGREDIENTS

Tuber of yam
Mortar
Pestle

PREPARATION

Take the tuber of yam and cut up into small pieces, so that it would soften on time.

Cook until soft and remove from heat.

Gently one by one remove from the pot and put into the mortar with the exception of the head of the yam because it would form irritating balls in the smooth overall dough to be produced.

Pound gently and as if forms the dough or a lumpy mass that thickens as you continue to pound maintaining consistency, add a little hot water to form even dough after a while when you observe that the lump is thick and hard and we want the dish to be - smooth and consistent. Once the lump is soften and less thick, it's ready for serving/eating.

SEMOLINA/SEMOVITA

INGREDIENTS

Semolina/semovita
Water
Spatula

PREPARATION

Pour water into a pot and place over heat and sift Semolina/Semovita to remove coarse particles.

Allow to boil and gently pour in the Semolina/Semovita into the pot using a small cup and at the same time turn the mixture as it thickens until no more Semolina/Semovita is left over low heat.

Continue stirring until the mixture to become thoroughly cooked and throughout this period, you have to keep stirring or the mixture forms thick curds that are unpleasant and makes the final food unpalatable. You can eat real food when you come home from work now. I will be adding lots of good, tested crock pot recipes from the freezing winters I spent in Minnesota and Iowa, and you will love them.

Then, you can pretend you didn't make it, because the kitchen is clean and there is one pot waiting with your dinner in it. If you are a husband trying to get on your wife's good side, just put some meat and potatoes in the crockpot with a little water and leave it for 8 hours. Later, share a romantic dinner together.

4 Very Large Apples, Cored
1/2 Cup Apple Juice
8 TBSP Brown Sugar
12 Hot Cinnamon Imperials
8 Caramel Candies (Brachs, that way you can buy just 8)
4 TBSP. Butter
1/2 tsp Cinnamon
1 Small Carton Heavy Whipping Cream

Whip the cream in chilled bowl with 1/4 Cup Brown Sugar
Put in fridge
Core apples, then remove 1/2 inch wide strip off the top of each apple
Place apples in cooker, pour apple juice over them
Fill the center of each with 2 TBSP Brown Sugar, 3 cinnamon candies, 1 TBSP Butter, and 2 caramels
Sprinkle with cinnamon.
Cover and cook on low 4-6 hours
Serve warm with whipped cream

When fired, the vessel is placed on pins so the bottom and sides are hardened during the firing process into one smooth laminated glass surface. You may notice slight pin indentations where the glass has flowed around the pin that supports the base during firing. The pin marks do not compromise the finish or performance of the vessel in any way but you should take additional care in handling if using on glass top stove.

Soup and Stock Tips - How to Prepare These Flavorful Liquids With the Freshest Ingredients!

Family custom is among the most beautiful expressions of cooking. Sharing recipes and techniques of preparation through generations, has become one of the most originative methods for the at home chef to create a niche for themselves in the kitchen. I acknowledge for me, while the phrase "Grandma Meal" comes to mind, my palate and senses illuminate with solace and excitation! This household tradition is a moderately easy split pea soup with mass amounts of flavour and aromatics acquired by hrs and hrs of simmering. Grandma (or Beeba as I've addressed her as I was a child) creates it a few times annually and freezes it for the family and guests to eat anytime we visit. The traditions like this soup, are what have successfully made me understand that it takes a lot of passion, experience, and fine ingredients to produce delicious soups and stocks.

Pot Stock

Nearly all soups begin with a type of broth or stock which are outlined as a liquid (usually water) that has been fortified with a certain flavour. Different variations of stocks include, chicken beef, vegetable, fish, duck, lobster, asparagus, corn, and so forth... the list is perpetual depending upon what flavour you're searching for, and what end result you are looking for. The concluding flavour you're seeking to accomplish determines how you will treat the elements entering your stock. For example: chicken stock vs. roasted chicken stock.

Pot Stock

Flavor development is very important to the success of a soup or stock, and that can be obtained in many different ways. If the chef at home would like to make a hearty, meaty and full-bodied soup, it's crucial to caramelize the components (meat and vegetables) first, then 'deglaze' the cooking pan with a liquid (occasionally red or white wine) to uplift the flavourful bits from the bottom of the pan, and impart those flavours to the soup.

'Mirepoix', is a French term represents the foundation of virtually all soups and stocks. This is comprised of a mixture of two parts onion, one part carrot, and one part celery. Aromatics develop a flavour enhancement that is added to your stock to bloom or increase flavors. Aromatics imay nclude: bay leaves, juniper berries, peppercorns, any herbs, any onions, or garlic.

Above all, we must determine what flavourful type of stock we desire, then determine what the future of our delicious liquid will be. Once you've added all your components, you're immediately ready to allow your stock to simmer. A simmer is a temperature between 190-200 degrees and most stocks have different simmering times. See these examples below:

Fish stocks~1 hour 30 minutes
Vegetable stocks~45 minutes
Chicken (Poultry) stocks~2 hours
Beef (Large Boned Animal) stocks~6 hours (normally pre-roast the bones)

The last step is filtering or straining your stock the right way. You are searching for the pure, beautiful liquid you just strengthened, and need to pass it through a strainer or "cheesecloth" to get rid of all the impurities and remaining ingredients. Your stock is now primed to be converted into a soup or sauce.

By definition, a Soup is a food that is made by combining ingredients such as vegetables and meat in stock or hot/boiling water, until the flavor is fullty extracted, forging a broth. Traditionally, soups are classified into two encompassing groups: clear soups and thick soups. The established French classifications of clear soups are bouillon and consommé. Thick soups are classed depending on the type of thickening agent applied: bisques are made from puréed shellfish thickened with cream, purées are vegetable soups thickened with starch; cream soups are thickened with béchamel sauce (a milk sauce thickened with a roux); and veloutes are thickened with eggs, butter and cream. Other ingredients generally used to thicken soups and broths include grains, rice and flour. The word soup originates from "sop", a dish comprised of a soup or thick stew which was absorbed with bits of baked bread. The contemporary meaning of sop has been confined to jonly the bread intended to be dipped.

Seasonal cooking can be a lot of fun, and although we don't experience all four times of year to the fullest here in the Sunshine State, I do however relish in garnering ingredients that are at their utmost and peek of freshness. Autumn is by far my preferred season, and I love cooking more substantial and heartier soups such as butternut squash, or asparagus, and a simple tomato-Parmesan soup with lentils and barley.

See the simple recipe below for butternut squash soup. It should only require close to 35 mins to make, and the flavours are tremendous!

Butternut Squash, Peeled 1 each
Onion, Chopped 1 each
Nutmeg 2 tsp
Unsalted Butter 2 Tablespoons
Salt and Pepper (to taste)
Chicken Stock 6 cups

-Cut the squash into 1-inch chunks. In a large pot melt butter. Add onion and cook until translucent, about 8 minutes.

-Add the squash and stock. Bring to a simmer and cook until squash is tender.

-Remove the squash chunks with slotted spoon and place in a blender and puree. You may have to add a bit of the cooking liquid to achieve the desired consistency.

-Return the blended squash to the pot. Stir and season with nutmeg, salt, and pepper. ---

-Garnishes for the soup may vary, as a suggestion, you can create a cinnamon flavored crème fraiche, garnish with fresh chopped chives, or top with pumpkin croutons
